Cross your fingers!

We will have internet at the house this weekend! Hopefully, this will be the last 4-3 day Monday recap! Given the time, I will only give a highlight of each day. I promise more detailed entries once we have the internet at the house!

Friday: Popping the Pizza-making cherry

After reading Emily eats clean pizza making experience, I wanted to see if Marcin and I can do the same. We are both a big fan of pizza and I’m a bigger fan of finding healthier versions of our favorite foods.

 
The recipe calls for:

  • 2 cups whole wheat flour  
  • 1 tbsp baking powder  
  • 1/4 tsp sea salt  
  • 3/4 cup water  
  • 1 tbsp olive oil  
Combine all the ingredients in a bowl. Unfortunately, I wasn’t thinking when I poured in the water and I poured in 2 ¾ cups of water! We had to double everything else! Made for a lot of dough!

 
Mix together and knead into a ball with your hands. Lightly flour your baking stone/pan and smash or use rolling pin to roll out until crust is about 1/2 inch thick.

 
For toppings, we added the follow:

 
  • Goat cheese 
  • Mozzarella Cheese 
  • Green Peppers 
  • Mushrooms 
  • Crab meat (Lenten Friday = no meat) 
  • Olives 
  • Tomato 
  • Artichokes 
  • Tomato sauce 
  • Basil 
  • Mexican four cheese (um . .we like cheese)

Into our new oven that is preheated @ 400 degrees! Waited 25 minutes (it’s supposed to be 20, but again, I messed up on the crust and we had to wait longer.)

 

 
 It was delicio-so!

 
I highly recommend doing this as a fun weekend night activity with your significant other!

 
Saturday: The Wal-Mart Experiment

 
For breakfast, Marcin and I took the leftover toppings that we couldn’t fit on the pizza and made another egg/egg white omelet.

 
Marcin is becoming a very good omelet maker!

  
BTW, my new favorite cheese:

 
Goat cheese!  So buttery, so creamy, so tasty! 

  
After breakfast, Marcin pointed things around the house that he thought would make a great picture.

 
I love the one of the icicles. Looks like it coming from tall trees huh? Actually, it’s forming on one of our small bushes near our garage. I love playing with perspectives!

 
I decided to check out the Wal-Mart that is near to the house. For as big as it is, I was actually disappointed. Not a whole lot in terms of selection in both food and beauty products. There was no separate section for the healthy stuff. The whole store was organized in an odd fashion. I do have to say, the prices were very competitive on the stuff that I did find.

 
I got all of this for $68.00. not too bad. Next grocery store experiment -the Better Health store.

  
Sunday: Chocolate chip cookies, Approved by Melissa

  
Sunday was originally set to be a lazy day of randomnees. However, my newly engaged friend Melissa invited me to go dress shopping with her. It was fun to see her try on all sorts of gowns. After the dress shopping, we stopped at the Ruby Tuesdays for a late lunch.

 
 I got the salad bar and white bean chicken chilli – yum!  Thanks Melissa for taking the pic!

  
We went to the mall afterwards and visited my friend Kyle and also stopped at some other stores. We walked passed Ms. Fields and I just had to stop to get some cookies. We got four cookies-two with nuts and two without.

It was a fun day that ended with left over pizza

 
And bubble bath (for obvious reasons, no picture for this!)!

 
Monday was sort of a wash due to a migraine. I suffer from migraines occasionally. My most common trigger is lack of sleep which was the problem for me since last Wednesday night. When my body senses that I haven’t been getting enough sleep, it sends me a lovely migraine to force me to rest! BOO.

 
On the healthy living front:
I’ve been doing good at incorporating new, healthy foods into my eating habits. I had the occasional junk (triple play at Applebee’s Saturday Night, Chinese takeout for Friday lunch, etc.) but again, this is the beginning of the journey for me, and I’m still learning. I bought all sorts of groceries on Saturday, so I’m hoping that will keep me on track!

 
On the fashion front:
It’s March! You know what that means? New Purse! Not to buy, but to have as my everyday hand bag. So to align with my purse schedule, this month, I will be carrying this “March” handbag:
While it’s not Irish green, it’s green nonetheless. It’s a faux Chanel, but I love it!

 
On the running front:
I’m excited. On Friday, I went to the gym and torched 316 calories on the elliptical! Today (Tuesday) is my first day of running since November. I’m starting a 5k training schedule for novices so that I better train myself this time around! Starting April, I will start a 10K training schedule! For today, I will be doing a 1.5 mile run on the tredmill with my new shoes!  Wish me luck!
