Come on Ride the Train . . and ride it!

I am slowly making my way back to the healthy eating regimin train that I fell off last week

Sunday:  "Release the Cracken!"
While many bloggers had a more traditional Easter (complete with Bunny Cakes, visits from the Easter Bunny, and delicious Honey Baked Ham), I went to my parent's house for some simple home cooked meal.  Marcin and I typically celebrate the holidays seperately.  We have started talking about what we would do once we are married, but we are taking the whole "We'll cross that bridge when we get there" road.
(Note:  No breakfast because I slept in WAAAAAAY late and hand only an hour to get to my parents!)
Lunch:
Usually, my dad cooks a feast on special occasions.  However, he's not feeling well so he made a decent size lunch for us.
Noodle Soup, Blanched vegetables (per my request), rice, roasted chicekn, and roasted steak. 

My dad always gets me to set the menu, but this time around, I knew that I wanted vegetables.  I spent most of the afternoon with my family.  AMC was having a Easter Movie extravaganza, so I ended up watching a very interesting movie called Barabbas (the criminal who was freed so that Christ can be crucified).  It was about his life after he was given his freedom.  Very compelling movie. 

I left my parents to do some laundry and to get ready for date night with Marcin.  We had such a busy day at the house on Saturday, we were in need of a date!

Before our date, I had some leftovers that my day gave me to take home.  First I took the left over Beef Steak and reheated it for a minute and a half.  Placed the meat and onions on a papertowel to soak up some of the uneccesary oil!
Next, I took two  pieces of whole wheat and spread some goat cheese on them:

It was ok . . .Beef Steak really goes better with rice, but I only have a small portion of the leftovers, so I didn't want to make a whole thing of rice just for that. 

With dinner in my belly and laundry done, it was time for date nght!  Marcin and I went to see Clash of the Titans in 3D.  I swear everything is in 3D now, I guess it's the theaters way of bringing in the audiences.

We enjoyed the movie with popcorn and Milk Duds!
Can you believe that is a medium size popcorn!?  What is up with sizes these days!  Anyways, the popcorn ended up being not to good.  The butter that they added was kind of gross tasting.  The milk duds (which I have not had in F.O.R.E.V.E.R.) was everything I would hope they would be and more.  I was good though and I still have some leftover!

Clash of the Titans was actually a good movie.  If you are a fan of anything ancient greece or ancient rome, this movie was a nice addition to the movie canon of that genre.  It also left itself open for a sequel, though I do not think it would happen.  This movie didn't get as much ad time as it should have.  Liam Nelson made an awesome Zeus!  He's one of my favorit actors. 
Monday:  Look Ma, veg-et-ta-ma-bles!
All good things must come to an end, so now here it is - Monday!
Breakfast:
I had original plans for breakfast with some food I left at the office, but I changed my plans regarding lunch, so I had to change my plans for breakfast.  Enter your friendly neighborhood Espresso Royale!  I resited the urge to buy coffee since I wanted to try something different and bought a Cherry Oatmeal Muffin.

Instead of coffee or tea, I just had hot water and lemon juice.  I recently read in a magazine that starting the day with this drink is a good way to "clean out your system."  Due to the week of crap eating, I figure I would help my system along and flush out the bad stuff.  This is by no means a "cleanse" since I am eating other foods.  It's more of a way to aid your digestion along.  Very similar to drinking green peppermint tea.  I got to say, it's . . different.  It's like drinking tea, but minus the tea flavor.  Oh well, I'm attempting this for this week. 

I had a morning full of organizing applications which only ignited a pet peeve of mine - incomplete, late applications!  The deadline for these applications was FRIDAY and yet, I found two waiting for me in my inbox this morning.  Unfortunately, I had to accept them, but I made a note to change the application to state that late applications will not be forwarded.  I mean, we hold our undergraduates to that standard, why not the M.A.'s and PhD students as well!  (sorry , end of vent!!).

It took all morning to go through the applications.  Now it's lunch time - perfect time to blog!

Lunch:
I took some the vegetables from Sunday's lunch home with me.  I decided to attempt my first homemade veggie sandwhich:

2 pieces of whole wheat bread, hummous spread, blanched radish, carrots, green beans, and asparagus

What vegetables I couldn't put on the bread, I had as a side dish.  I have to say, I was quite please with the sandwhich.  I think the hummous helped me ease into the veggie sandwhich world.  My past experiences with veggie sandwhiches have been the Subway or Jimmy Johns variety where really, they just add ALOT of lettuce and a smattering of other veggies that you request.  That always turns me off to the veggie options.  I mean, if I wanted all that lettuce, wouldn't I just order a salad instead!  So now I know the secret - make it yourself!  LOL!

On the healthy living front:
Ah, it's good to back on the train.  I'm also going to start working out again.  It's weird how regular exercise and healthy eating choices kind of go hand in hand.  I took a week off to start packing my apartment, thinking I would continue eating well.  Instead, I was stressed and busy with the packing, that I ended up not taking time to eat well and order take out! I decided to spend one day each week to pack up my apartment, and spend the rest of the week working out and such.  The weather is so nice now, I want to start running outdoors again!

On the fashion front:

Monday's work outfit:

This is one of my favorite work shirts.  Unfortunately, I think it's two washes away from being too stretched out!  :(

On the running front:
I will resume my 5k training schedule tomorrow.  Today, I plan to do my full body workout given to me by the personal fitness consultant at Snap Fitness 24-7.  Stay Tuned!

i'm so jealous y'all went to see that! my hubby saw the commercial and already said he didn't want to see it - cracks me up!

Nice 3d glasses! Did you get them at the theater... the ones here are not that nice.

@Nutritious Foodie - The theater provided them for us. Emagine Canton. They even had a kiosk to recycle them after the movie.
