I spent all day Wednesday at a conference for work.
Breakfast:
On the way to work, I had the second half of my Snuffleupagus. Once I got to the conference, I had:
your typical conference breakfast fare. I had 1/2 of a wheat bagel, numerous pieces of fruit, and green pomegranate tea.
There were two sessions in the morning. It was very enlightening, especially this one session on Social Media. The wheels started turning in my head about ways to incorporate what I learned in both my personal and professional life.
At lunch, I selected the vegetarian meal. It was a quinoa rissoto with a vegetable stack (portobello mushrooms with zucchinni). Not pictured because I got into some really great discussion with the folks at my table.
One more session in the afternoon and I was done for the day.
Once I went home, I was in a cooking mood. I was sort of inspired by my lunch from yesterday and my lunch from today.
So I created what I called "Quinoa Bowl"
Ingredients:
1 cup of cooked quinoa
9 pieces of sundried tomatoes
Artichoke hearts
1 can of black beans
2 cups of frozen corn
1 can of tuna (packed in water)
First, I cooked the quinoa according to the package.
Next, I added the rest of the ingredients in a large pan and toss around until everything is almost heated through.
Add the quinoa to pan and mix again.
I added sea salt, pepper, and cumin to taste.
After the first bite, I felt like something was missing. So I added a splash of lime juice mixed with chili powder to my serving. It was exactly what the dish needed!
After dinner, I went to yoga with Brooke and Michelle. It was much needed after a two week hiatus. I got home and Marcin had an awesome present for me!
A Jack Daniel's hat! I'm a JD girl - JD and coke was my signature drink for a long time. I was happy!
Now I'm sitting here, catching up on my blog, and enjoying a nice glass of Leelanau Cellars Blueberry Wine.
Whew . .and now I'm caught up!
On the active living front:
So I have a couple of different things going on:
1) Successful Green Monster, which I call Snuffleupagus, was made and finished today. It was just ok on day two.
2) No coffee during the week - It was REALLY hard not to grab a cup of conference coffee (my favorite!) in the morning. But I was good and I had the green tea. I even went for a second cup of tea, only this time I did something English (read: British) and had English Teatime Tea with milk. Unfortunately, the dessert that came with the lunch (lemon bars) was super sweet, so I had a small cup of decaf coffee so that the bitter taste would counteract the cuper sweet lemon bar (again not pictured).
3) Vegetarian Option - I decided that since I attend conferences like this a couple times of year, I would always select the vegetarian option. I am completely bored with conference chicken no matter how differently they dress it up!
4) Waking up early - The goal this week was to wake up at 7:05 am this week. Well because I had a conference to get to, I woke up at 6:55 am! I'm still aiming for 7:05 for this week.
On the fashion front:
Why is it May and I'm wearing this?
This is my fall/winter long sweater and I'm wearing it in May! Why? Because this is Michigan and our weather is schizo! I'm not smiling because it's my birthday week and I really would like nice weather!
On the active front:
Day 2 of the Push Up Challenge
I did them before yoga. That's the one thing that is convenient about push ups, you can do it anytime and wear anything.

I hope you get the garmin! I love mine! Since starting at my internship my coffee consumption has been ridiculous. Have you had headaches or anything from not drinking it?
@ Courtney - so far no headaches from not drinking it . . but I do have to say, the small cup of decaf that I had with my lunch dessert TORE UP my stomach! I'm chalking that up to weak conference coffee! Which Garmin do you have?
I was thinking about it, and my dad's migraines are triggered by caffine and sadly...beer/alcohol. Just a thought. Hope that's not the case with you!
@ Brooke - Thanks for the note. I don't think that alcohol and caffiene are my triggers per se. At least with the alcohol, I think the strong coffee that Marcin makes + the fact that I sit at my computer for 8 hours straight is what leads to my migraines during the work week. On the weekend, I'm more out and about expelling the extra energy boost that coffee brings. . .
