Whole Wheat Dark Chocolate Chip Blueberry Cinnamon Pancakes!

Say THAT three times fast!  LOL!

After a 2 day work week and 10 hours of sleep, this girl is ready to start the weekend!   But first, Friday!

Friday

Breakfast
Greek yogurt with handful of Cascadian Farms Multi Grain squares, blueberries, and granola.  Black coffee, as always.

As always, work work work.  Got some bad news about my summer, saved the day for some very important paper work to be sent out, and cut down my e-mails in my inbox.

Lunch
Leftover Chinese.  Not exciting I know, but I needed to finish it up!

More work soon followed (isn't this exciting!?).  Then it was off to home.  Stopped by the theater to buy evening tickets to Killers with Katherine Heigl and Ashton Kutcher.  I'm not sure why, but I do not particularly like Katherine Heigl, but I enjoy the movies that she's in.  She plays those lovable neurotic characters really well.  Anways, when I got home, Marcin and I didn't know what we wanted for dinner.  We almost went for Buffalo Wild Wings, but thought better.  Instead we decided on Pan fry fish with rice, spinach and carrots.

To start we took 3 pieces of fish (I think it's 1 catfish and 2 tilapia):

Dip them in a egg white wash (not pictured).  Then coated them with Italian bread crumbs mixed with red pepper flakes, parsley, and polish seasonings:
After the fish was done, I used the same pan to saute carrot and spinach.
Add a small scoop of rice and viola:
Definitely better than Buffalo Wild Wings!

Killers was actually cute.  Think of it as a more comedic version of Mr & Mrs. Smith.  I give it a thumbs up if you are looking for a light funny movie.

Next up, 10 push ups and then it was off to bed.  Slept 10 hours and it felt great!

I have been craving pancakes for a while now, so we decided to make them for today's breakfast.  We've done the whole wheat dark chocolate chips pancakes before, but this time we were running low on chocolate chips.  I thought that we could add blueberries in the mix too.  Then as I was collecting all of the ingredients, the cinnamon spice caught my eye and I thought "Oh why the hell not?"

Mixed up and cooked, you get . . .
Whole Wheat Dark Chocolate Chip Blueberry Cinnamon Pancakes!

I also wanted eggs and bacon, so I micro-poached an egg:

Then I George Forman-ed some turkey bacon for Marcin and I:

So after one poached eggs, 2.5 slices of turkey bacon, and three pancakes, I'm one happy girl ready to start a day full of chores.

After breakfast, I got to work on deep cleaning our showers and the getting the laundry going.  Marcin cleaned up our mini jungle that is the front yard and cleaned the toilets!  I'm so glad that he is ok with doing that because cleaning toilets is the one chore that I detest!

Now it's some chill time before we have yet another bbq!

On the healthy living front:
I've started researching a week long detox plan.  I was referred to the 7-Day Raw Food Detox, but I'm not sure I would be able to do it.  I found this one which I think is a little bit more doable because I love to steam vegetables and it allows for a steam or baked fish or chicken if you are desperately hungry.  Hmmm . .still need to do more research on it.  Also need to find a week where I don't have any social engagements to get in the way - HA!  good luck with that Jessica!

On the fashion front:
Would you believe I have a new purse obsession.  This one is so specific though, and the inspiration for it is so expensive!
It's a Derek Lam Amelie Mini Tote (you can see a better picture of this bag in black here).  This bag is $1250.00 so obviously, I'm looking for a cheaper substitute.  It's basically a barrel bag cross body with smaller handles so you can carry the bag two ways.  Do you know how hard it is to find a cheaper version that is not a child's bag!?  I really wish I had artistic talent so that I could just make my purses myself!  Sigh!

On the active living front:
Mostly doing chores this weekend as my exercise.  Running up and down the stairs doing laundry, picking up stuff in every rooms, cleaning the bathrooms, etc.  I have a training plan for my 5 mile trail run which will start on Monday!  Stay tuned!

Why are you thinking about doing a detox? The body detoxes itself every single day by itself. That stuff is a scam!
