The 4 Miler that didn't happen

And it's Friday!!!! YAY!

Apologies for not blogging last night.  I know that some of you were waiting in anticipation for my July Purse.  I had every intention of blogging.  I also had every intention of running 4 miles as prescribed by my training schedule.  I posted it on my status on Facebook.  I started drinking water in the afternoon.  I even started to stretch some of my tight muscles while I was at work. 

But then . . .well I will explain that later . . .on to the eats!

Got to tell you, I was doing a happy dance as I ate this bowl of delicious goodness!  Got to work and went on with my business.  I even got to hang out in the front office for a bit to learn a different perspective of the department.  Soon, it was lunch time.  I was very excited because my friend Tiffany was in town and we made a lunch date!

It was a great time at lunch.  Tiffany is getting married in August and I am getting married in October.  We both need a free-for-all vent session over the respective drama that we are both experiencing with our wedding planning.  We both find it interesting that weddings seem to bring out the best in some people and the worst in others.  And this is not just those who are participating in the wedding.  Invited guests can and will show their true colors once they get wind of the upcoming "blessed" event.  Snarky snide comments, excuses galore, and just an overall disappearance from the sphere.  *Sigh* 

So after the vent session (and taking half of my lunch back to work), it was back to work I went.  The rest of the afternoon was spent fielding questions, answering phones, and drafting e-mails.  Pretty tame.  All the while, I was revving myself up for my 4 mile run.  I don't know why, but I was actually getting nervous.  Even though I ran 6 miles on Sunday, I was almost afraid of the 4 miler!  Anyways, 5:00 rolled around, went home.  That is where I started to feel down right crappy.  I had no focus, I had no energy.  Marcin said I looked sad and depressed.  I wasn't emotionally, but I think I was physically.  I decided not to run.  :(  That bummed me out even more, but I knew that my body was telling me to stop moving and sit still.  So after making that decision, I got to work on a simple dinner - Shrimp and Scallop Stir Fry with Fried Rice.  I know it's sounds intricate, but it was really easy!  I only needed one pan and three bowls.

Dinner
Step 1 - Marinate the shrimp and scallops.
In the marinade:
Asian Fish Sauce (aka Patis)
Soy Sauce
Lemon Juice
Olive Oil
Seseame Seed Oil
Paprika
Parsley
Seas Salt
Cracked Black Pepper

No measurements - this was done Rachel Ray style!  Basically I added enough of each to cover all of the shrimp and scallops in a light coating.

Step 2 - While the shrimp and scallops marinate, I got to work on the fried rice.  Heat up pan (or wok) with olive oil (roughly a tablespoon).  Add one cup of day old cooked rice.
Step 3 - Then add one cup of green peas and edamame (you don't really have to do this part, but I wanted to)
Step 4 - Work rice both around in the pan in order to heat through.
Step 5 - While the rice mixture is heating through, take whisk one egg and season with salt and pepper.

Step 6 - Add egg to the pan.  Let the egg cook a little before you start to work it into the rice, this way you get those egg chucks in your fried rice.

Step 7 - Once everything is cooked through, remove pan from heat and serve rice on plate.
Wow, one cup of rice exploded!  Next half a cup!

Step 8 - Return pan to the heat and add your marinaded shrimp and scallops and any vegetables that you want in your stir fry.  I had leftover snow peas, carrots, broccoli, and cauliflower that I needed to use up.

Step 9 - Work around pan until the shrimp and scallops are cooked and the vegetables are cooked through.

Step 10 - Remove from heat and serve on top of rice.

It was exactly what I needed!  Don't worry, Marcin helped himself to some of this plate, so I didn't eat the entire thing all by myself!

The rest of the night was spent sitting on the couch reading a magazine.  When guys night started, I went to our bedroom and snuggled with a good and entertaining book.  It felt great to just layout in bed and read.  I haven't done that in a long time.  I spent two and half hours reading before my eyelids started to droop and the book started to fall out of my hands.  Time for bed!

It was the best night sleep I had in a long time.  I woke up this morning rested and rejuvenated!

I got to campus early and stopped at Espresso Royal for a small Caramel Vanilla Latte.
Work this morning was a bit challenging.  I received a request to add three new classes to the schedule.  Normally, I can do this in my permanent department because I know our schedule like the back of my hand.  That and we technically only have about 3-6 courses each semester for me to manage.  The department that I'm working in during the summer has hundreds!  Luckily, I only had to focused on one subject and the upper level course for that subject, but that is still 40 classes!  After a brief moment of panic, I manage to work through it and devised a plan.  I haven't put the courses in the system yet because this requires some diplomatic finese with another department.  Basically I have to sweet talk the guy who is charged of scheduling the rooms!  Hopefully this will get resolved next week sometime.

While I working on this project, I forgot that I haven't eaten anything with substance.  So thankful, I had my leftover sandwhich from Thursday lunch to tie me over for the next couple of hours.


On the healthy living front & active living front:
I merge the two for this post because I think what happened to me on Thursday is good example of listening to your body when it needs to rest and recuperate.  This is so that you can remain active and not burnout and keeps you healthy because resting your body is just as important as keeping it moving.  Today I feel almost like new (I still feel tight in some areas, but nothing that the Foam Roller can't handle!) 

On the fashion front:
So July's purse is a bit of a wild card.  It's not a designer purse like the purses of the past 4 months have been.  Instead, it's a purse I bought at the Ann Arbor Art Fair that goes on every July.  So in honor of the Ann Arbor Art Fair and the bohemian side to campus.  I give you July's purse!

I know, I know, nothing to oooh and ahh about, but this purse is actually quite durable and handy.  It makes a great beach bag and can hold lots of items!  It has a zippered pocket in both the front and inside of the bag and the front pocket is deep enough to hold my coffee tumbler.  This year, I'm thinking about getting another one in more of a Red, White, and Blue theme or maybe something with more neutral tones.

Love, love, LOVE the fact that you post your recipes. You and Tash are my only friends who like to cook and that makes me so happy because I'm an AVID cook! We should have a dinner party sometime and we can each bring something homemade and different. OR, better yet, we could cook/bake together!!! : )
