And it's Monday!

Whew!  What a weekend my friends!  Did anyone else have a jam packed weekend?  Luckily, I was able to find some downtime Sunday night to recover slightly, so I'm dragging too much this morning.  Let's REEEEEEEEWIND and recap!

Friday
Dinner
As I stated in my previous post, Friday night's dinner was going to be Beer Can Chicken.  Well, this bad boy took an hour and half to cook!  No needless to say, we was hungry when it came time for dinner!

After Marcin's mom left after dinner, we spent ther rest of the evening watching recorded episodes of Tosh.0!  Good laughs!

Saturday - BEACH DAY!

Woke up early to meet up with friends to drive a hour and half away for the beach! 

Breakfast
Poached egg and whole wheat waffle with DCPB and Homemade Kiwi Jam

That tiny breakfast held me over for quite awhile.  Our friend Nick and Michelle came over at 10:00 am and off we went to Lexington Beach!  I remembered to bring snacks this time, so I had various nuts mixed together in a jar and some cheeries in another jar. 

Hello Lexington Beach!

 It was a semi perfect day for the beach.  The sun was warm (and we were SPF'd!) and water was cold . . .like ICE cold!  Once you get used to the water though, it was great to play in.  We threw a football around in the water (well SOME of us was in the water . . yeah, I'm calling you out Nick!).  I practiced tredding (sp?) water, something that I'm want to get comfortable with if I am ever to get over my fear of deep water.  Michelle and I raced in the water by running to certain points and back.  All in all a good day.  Then we noticed these menacing clouds:

We decided that it was time to close up shop and head off for some pizza!  In true Lexington style, we took Nick and Michelle to Steis Village Inn for their fabulous pizza!  This time we ordered the Deluxe pizza and added olives to the mix.

Late Lunch

We drove through the storm for a bit and then arrived home by 6:00 pm.  After cleaning up a bit, Marcin and I went grocery shopping for some much needed supplies.  When we got back, I was hungry again, but didn't want something hefty. 

Dinner
I was craving beets and a sweet potato . .. so I thought why not just have a plate of both!  I managed to find some "small" sweet potatoes on a recent grocery trip.  I added greek yogurt on top.  It's great to satisfy two healthy cravings at once!

In the evening, we watched Book of Eli, starring Denzel Washington and Mila Kunis.  It was a great movie!  Although, I beginning to think that Denzel Washington plays the same type of character, regardless of the fact that character is a "Good Guy" or "Bad Guy."  Eh if it works, it works!

Sunday
We finally had all the ingredients for the original recipe for the Russian Blini's.  I apologize, I forgot to bring the recipe with me, so I don't have it.  Once I get home, I will create a recipe page for this version.

Breakfast
Marcin made a Supersized Blini when it got down to the last of the batter! 

We had greek yogurt, kiwi and black currant jam, and cream cheese on hand for these blinis.  In comparision to the first version, these were thicker and tasted great with all the toppings.  The first version was delicious with the toppings and without.  I see us making both versions in the future, I guess it depends on how thick of a blini we are craving!

On Sunday we went to a Surprise Birthday Party for our friend Takashi.  It was at Heritage Park in Farmington.

A professional photographer was one hand, so I left my camera in the car after I took thiese pics so that I won't tread on his job.  It was a great time, complete with a water fight of water guns and water bottles . . .and maybe cups of ice!  We were all a hot wet mess at the end, but we laughed at every minute of it!

Lunch consisted of a BIG plate of salad and one slice of pizza!  I was so proud of myself that I held back from taking another slice.  I did snack on Natural Cheese puffs here and there, but no more than three at a time.  I drank LOTS-O-WATERand one cherry Pepsi!  A slice of cake was also had!

When we got home, it was time to do the laundry!  I think that this is one chore that I actually like doing.  I don't really mind treking up and down the stairs carry loads and then hanging stuff to dry or folding laundry from the dryer.  I find it sort of soothing.  It came time for dinner.

Dinner
Leftover grilled vegetables and chicken breast from Friday night's dinner on top of a Michellena's cheese ravioli frozen dinner. 

For Sunday night we watched Juno.  I had seen it in the theaters, but I wanted to see it again.  I'm not sure if Marcin enjoyed it, because when I asked what he thought of the movie when it was done, he said, "It was surprisingly deep."  I'm going to take that as he enjoyed it.

Monday
Breakfast
We slept in a bit late, so I had to throw my breakfast in with my lunch and drive to work! 

The last of my rice pudding with a granola bar crumbled into it. 
It was great combo of creamy sweetness and hearty crunch!

And we are caught up!  YAY!

On the healthy front
I think I'm going to switch my lunches up for the work week.  Outside of Wednesdays (my day off), I will bring a cold lunch to work.  I want to challenge myself to bring a healthy lunch that doesn't have to be preheated in a microwave.  Maybe it will save me time in the morning or maybe it force me to get creative with my lunch.  There's no rhyme or reason why I'm doing this, I just want to do it.  Wish me luck!

On the fashion front:
If you are a Fan of my Facebook page, then you will know that the search is on for a new July purse.  My current one met an untimely fate after a day at the beach!

The zipper fell off of the front pocket and I can't get it back on!

Lucky for me, Ann Arbor Art Fair is this week and I shall go back to the same stall that I went to 2 years ago and acquire a new bag!  :)  I'm thinking either something in a yellow color or something in earth  tones!

On the active front
Booked a hotel room in Lansing for my 5 mile trail run next Saturday!  I'm chaning my training schedule a bit:
Monday - 3 miles
Tuesday - Strength train
Wednesday - 4 Miles
Thursday - Strength Train
Friday - Rest
Saturday - 5 miles
Sunday - Rest

Wish me luck!  I don't think I will aim for speed this week . . more like working on being committed to running the full distance.
