Breakfast Rice Pudding

Breakfast Rice Pudding (adapted from Carrots 'N' Cake's recipe)

Ingredients:
  • 1 cup uncooked arborio rice
  • 1 cup Rice milk
  • 1/2 cup almond granola
  • 1 tbsp brown sugar
  • 1 tsp vanilla extract
  • Nutmeg or Cinnamon
  • Cardamon

Directions:
Step #1
Bring 1 cup of arborio rice to boil  in 1 cup of water and allow to cool for 15-20 minutes.

Step #2
In the same pan as you cooked the rice, add the rice milk, granola, brown sugar, vanilla extract, and the spices - nutmeg, cinnamon, and cardamon (you can add whichever spices that you want) .Stir everything together.

Step #3
Pour rice mixture into a large Tupperware container and store in the refrigerator overnight.


Step #4

In the morning, scoop a serving into a bowl and grab a spoon.


Eat and enjoy!

    my hubbys fav is rice pudding. make mine a tad diff though. good idea with the granola

    I bet this was super creamy with the arborio rice. I always think of rice pudding as dessert, but it really would be a good breakfast eh?

    @Mira - You will have to send me the recipe!

    @Claudia - It was, but I think I went a little crazy with the cinnamon. Next time Cinnamon OR nutmeg! :)

    @Samantha - It didn't have a grainy texture to it, but I think next time I would add some greek yogurt to give it more creamy oomphf - that or Coconut milk or a thicker milk. Rice Milk is a bit thin.
