So once again, life is getting in the way of me blogging at a somewhat regular schedule. Tomorrow, it's going to be the start of the 3 month countdown to the wedding and I feel like it's going to get more and more difficult to blog. I thank you all for your audience and for you patience!
So, now it's on to the eats!
Tuesday (Whoa . .didn't realize I had to go back that far!)
Lunch
Simple sandwich - Arnold Thins, muenster cheese, one slice of turkey, one slice of ham, one slice of roast beef, with hummus spread.
At first, I wasn't to thrilled with the thought of eating my sandwhich, but after the first bite, I was hooked. The hummus and the roast beef combo created a delicious tangy taste. Hmmm . . .maybe a way to healthy up a roast beef sandwhich? Hmmm Roast beef . . .great now I've started another craving!
Work went off with out a hitch and I went home to change and head to the gym for Speed Workout #2. I a little intimidated by it, even though it's one of the easy Speed workouts that I do. Partly because I was worried my lungs weren't up to snuff yet after the whole inhaling chemical fumes debacle of Saturday! More on that later.
Dinner
It was Tuesday, so you know what that means . . .PINT NIGHT!
Start the meal off with Widmer Drifter IPA
I'm typically not a fan of IPA's, but this one is slowly becoming my favorite summer beer.
Dinner was a BBQ Chicken pizza split between Marcin and I.
YUMMMMMMMMMMMY!
I do have to confess, I did have a side salad after the pizza, I was HUNGRY!
Wednesday
I decided to treat myself and slept in a little bit. By the time I woke up, I was hungry. I wanted BACON. Unfortunately, I couldn't find any bacon in the house, so I went to my friendly neighborhood Plato Restaraunt since they serve breakfast all the time (it was just before 11:00 am). The waitress was so friendly, she let me have the Breakfast Special (which ends at 11:00) even though it was like 10:57 am!
Breakfast:
Two eggs - sunny side up, 5 strips of bacon (!!!!), hasbrowns and whole wheat toast!
Too much for this girl to handle, so I ate all of the eggs and bacon (I WAS craving bacon after all) and half of the hasbrowns and half of the toast.
Off I went to my parent's house to visit my madre for her birthday. My family is not really big on celebrations (could be that is why I like to go all out for mine . .to make up for the lack of celebration in home life) so it was just some chill time with the folks. I brought over the Puto that I made over the weekend to get their thoughts of the authenticity of the dessert. Everyone loved it, though they said it's the not the original form that they were used to. My version is a bit more gelatineous, while the puto that we grew up on was a bit more spongey. I think I may have to try a next batch with a bit more flour. In any case, I'm probably going to make a lot more of these in the near future! :)
My sister and I went to the mall to pick up some things. I needed new shoes for my Bridal shower dress (AH! the bridal shower is next week!). We were also doing some window shopping for my mom and her dress for the wedding. Somehow, we also ended up picking out the jewelry for the Bridal party! I'm excited and can't wait to give it to them! :)
On the way home, my phone decided to reset itself (AGAIN!) and I got fed up. Now, I really love the Droid Eris! However, I think I ended up with a lemon of a phone. Since I've had it, my phone has:
1) Resetted itself 2 times
2) Only lets me take one call at a time . .to the point that I have to turn off my phone and turn it back on if I want to make another phonecall
3) When I go to dismiss an alarm . . it will continue to vibrate or ring even though i distinctly pressed snooze or dismiss.
After this last reset, I drove straight to the verizon store and complained (in a nice way of course). They are sending me a new phone and it should be here on Friday. Cross your fingers that it too is not a lemon!
After that debacle, I went two doors down from the Verizon store to check out a new Sushi restaraunt - Kabuki! It had a really nice atmosphere.
Dinner
I sat at the sushi bar and read while dinning on their Sushi combo Regular:
8 pieces of sushi with a tuna roll
I took my time with dinner because in all honestly, it was a bit of a rough day. I needed time to just sit, read, eat, and relax without the stress of the day getting to me.
When I got home, I continued to read until Marcin came home. When he got home, I grabbed his computer because I had found a new recipe for the rice pudding that I made previously. As I said before, the first batch I made was just ok. It was not what I was hoping it would be. So I just took that batch and used it for a recipe I found Slashfood.com. It was a very simple recipe, but did take a long time to cook. You have to wait for 3 cups of milk (I had used coconut milk for the rich creamy taste and texture) to absorb into 2 cups of rice. It takes patience. In the end, the results were phenomenal.
Thursday
Breakfast:
Had the rice pudding cold with Puffins sprinkled on top. It was everything that I think a Breakfast Rice pudding should be! I divided the big batch into 2 containers, so one is for me and one is for Marcin. He had his warmed up and almost devoured his whole portion! Looks like we have a winner for ready made breakfast!
Whew . . all caught up! Thank you for sticking with me through all of it! :)
On the healthy living front
Hmmmm . . .looks like I've been on the carb heavy side of late. Must throw in more vegetables into the mix soon! I do have a batch of Bok Choy that I've been meaning to steam or stirfry. I just need to find a protein to go with it!
On the fashion front
Recently a good friend of mine posted a picture of herself sans makeup on her Facebook. Of course,she looked absolutely beautiful and I felt inspired by her courage and gumption to do that. So in honor of her, I am posting a picture of myself sans makeup for the blog world to see:

On the active living front
So my speed workout on Tuesday is typically my easiest. However, it was a bit rough on Tuesday because my lungs are still suffering from the chemical fumes inhaled on Saturday. However, I worked through the workout as best as could. The typical format is this:
Speed Workout #2
Warm up for 1 mile at a speed of 5.5
Hard run for 2 minutes at a speed of 6.5
Easy run for 2 minutes at a speed of 5.5
Hard run for 2 minutes at a speed of 6.5
Easy run for 2 minutes at a speed of 5.5
Hard run for 2 minutes at a speed of 7.0
Easy run for 2 minutes at a speed of 5.0
This should take to a little over 2 miles!
However, on Tuesday, it went more like this:
Warm up for 1 mile at a speed of 5.5
Hard run for 2 minutes at a speed of 6.5
Easy run for 2 minutes at a speed of 5.5
Hard run for 2 minutes at a speed of 6.5
Easy run for 2 minutes at a speed of 5.5 - then dropped down to 2.0 because my hair started to fall out my ponytail.
Attempt at Hard run for 2 minutes at a speed of 7.0 which lasted a minute, then dropped down to 6.5
Easy run for 2 minutes at a speed of 5.0
So I'm giving myself points for simply sticking with it. :)
